Brinjal Varikatris are a larger variety of eggplant with a distinctive egg shape and shiny skin adorned with white and purple stripes. The creamy flesh offers a pleasantly bitter taste and contains numerous small, soft, edible seeds. These eggplants are not suitable for long-term storage, so it’s best to consume them within a few days and store them in a cool place away from direct sunlight. Once cut, the inner white flesh quickly turns brown, so it’s recommended to use it immediately or refrigerate the remaining portion in an open bowl or plate to prevent decay.
